The Jailbreak is rumored to work on iOS 10.1.1 as well.
Recently, Apple, an American multinational technology company availed the iOS 10.1.1 in an effort to keep its Operating System secure and private. The Jailbreaking process has also been made even more difficult by the tech giant through the implementation of Apple's KPP (kernel patch protection). The protection made it even more difficult to release a stable Jailbreak despite the sign of having a possible Jailbreak on iOS 10.1.1.

The demonstrated Jailbreak uses a specialized library to Cydia Substrate to run tweaks on the latest firmware. The creator and maintainer of the Cydia Substrate, Saurik, seem to be confident that it should work just well on the latest firmware. However, a comment he shared on Reddit, questions the legitimacy of the video.
The Jailbreak seems to be relying on a specialized app to re-Jailbreak the device after every reboot. Though, it seems that this Jailbreak is done, legitimate or not, however, it will not be released to the public. The developers claim that maintaining a public release takes too much effort.
The video really confirms the fact that it is certainly possible to Jailbreak the latest version of iOS 10.1.1, but it will not directly result in a public Jailbreak for iOS 10.1.1. However, the developer can opt to share the exploit with a team who are prepared to maintain a public release.
